Homemade Crunchy Peanut Butter Cookies - Okanagan - British Columbia

I don’t bake much in the summer since it’s too hot to turn the oven on, but today was a cool day so it was perfect for getting some gardening done and whipping up a batch of these Crunchy Peanut Butter Cookies. There’s something about having all the windows open, fresh cut garden flowers on the counter, and peanut butter cookies baking in the oven that just makes a cold Sunday seem perfect.

I’ve been making these since I was a kid using Kraft peanut butter, but I’ve since switched to natural peanut butter so I had to make a few minor changes to my original recipe to make it work. If you haven’t tried a natural peanut butter yet the first thing you’ll probably notice is that it tends to have more of a runny consistency since it’s just peanuts and maybe a bit of salt, depending on the brand. So you usually need to stir it before using – TIP: Store your natural peanut butter jar upside down in the fridge overnight before opening and it should be much easier and less messy to stir. These turned out delicious and I don’t think anyone would know the difference. I used Adams Crunchy 100% Natural Peanut Butter to give them a bit of texture, and Simply Organic Vanilla Extract)

Crunchy Peanut Butter Cookies

  • ½ cup unsalted butter
  • ½ cup natural crunchy peanut butter
  • ½ cup white sugar
  • ½ cup packed brown sugar
  • 1 egg
  • ½ tsp. vanilla extract
  • ¾ tsp. baking soda
  • ¼ tsp. salt
  • 1 cup all-purpose flour

Preheat oven to 350°F degrees and line a baking sheet with parchment paper or one of those Silicone Baking Mats. Combine butter, peanut butter, white and brown sugars, egg, and vanilla extract in a large bowl or stand mixer until smooth and fluffy. Add remaining dry ingredients and stir until evenly combined. Cover and chill dough in the fridge for about 10 mins. Then roll cookie dough into 1 inch balls (approx. 2 tsp.) and place on baking sheet. Bake for 7-10 minutes, until edges are light brown – do NOT overcook. I usually bake mine for 7 mins, but every stove is different so you may need more or less time, adjust accordingly. After removing cookies from oven, let cool on pan for 7-10 minutes, transfer to wire rack to cool completely and then devour!
